Spicy Bite-size Burgers

Ingredients:

1/2teaspooncoriander
1/2teaspooncumin seeds (dry fried)
4ouncescoconut (freshly grated or desiccated, soaked in 4 to 6 tablespoons boiling water
12ouncesbeef (finely minced)
1clovegarlic (crushed)
1wholeegg (beaten)
2tablespoonsplain flour
2tablespoonsgroundnut oil for frying
1pinchsalt
1wholelemon or lime (cut into wedges)

Method:

Place the dry fried coriander and cumin seeds in a mortar and grind thoroughly with a pestle.
In a bowl, mix the grated or moistened desiccated coconut with the minced beef.
Add the ground spices to the meat and coconut mixture, together with the garlic, salt to taste and sufficient beaten egg to bind.
Divide the mixture into evenly sized portions, and form the portions into burger shapes.
Dust the burgers with flour. Heat the oil in a frying pan and fry the patties for 4 to 5 minutes until both sides are golden brown and cooked through. Serve with lemon or lime wedges, to squeeze over.
