Spicy Bite-size Burgers |
Ingredients:

1/2 | teaspoon | coriander |
1/2 | teaspoon | cumin seeds (dry fried) |
4 | ounces | coconut (freshly grated or desiccated, soaked in 4 to 6 tablespoons boiling water |
12 | ounces | beef (finely minced) |
1 | clove | garlic (crushed) |
1 | whole | egg (beaten) |
2 | tablespoons | plain flour |
2 | tablespoons | groundnut oil for frying |
1 | pinch | salt |
1 | whole | lemon or lime (cut into wedges) |

Method: |
Place the dry fried coriander and cumin seeds in a mortar and grind thoroughly with a pestle. |
In a bowl, mix the grated or moistened desiccated coconut with the minced beef. |
Add the ground spices to the meat and coconut mixture, together with the garlic, salt to taste and sufficient beaten egg to bind. |
Divide the mixture into evenly sized portions, and form the portions into burger shapes. |
Dust the burgers with flour. Heat the oil in a frying pan and fry the patties for 4 to 5 minutes until both sides are golden brown and cooked through. Serve with lemon or lime wedges, to squeeze over. |
